This is a flavorful substitute for ordinary mashed potatoes.
This puree may be made ahead and reheated.
- 2 whole turnips, medium sized, peeled and diced
- 2 whole new potatoes, peeled and diced
- 1 tablespoon unsalted butter
- 1 teaspoon sugar
- 1 teaspoon horseradish
Bring a saucepan of lightly salted water to a boil.
Cook the turnips and potatoes for 6 to 8 minutes, until tender.
Drain thoroughly and place in a food processor with the butter, sugar, and horseradish.
Puree for 1 minute, until very smooth. Taste and season with salt.
