I use this as a steak sauce, but it is also wonderful as a marinade for a london broil. Central Market makes this and I became an absolute addict, so when they were out of this marinade on three consecutive visits to the store, I begged for the recipe and they were kind enough to show it to me.
|1 cup capers, with the juice||1 cup olive oil|
|1 tablespoon Dijon mustard||1/4 cup balsamic vinegar|
|2 teaspoons Worcestershire sauce||2 teaspoons anchovy paste|
Quarter the onion and place it in a food processor. Mince the onion and add the remaining ingredients. Pulse on/off until well blended but not really pureed.
Refridgerate any unused portion
Will last about 2 weeks.
