Grilled Rockfish with Lemon
This is so simple both in preparation and flavor.. an excellent summer dish. I have substituted snapper when rockfish is not available.
Make the Sauce: Puree all sauce ingredients in a blender or a food processor fitted with a steel blace. Set sauce aside until ready to server
Marinate rockfish: Combine 1/4 cup olive oil with 1 teaspoon of the rosemary and the pepper. Brush fillets with seasonings. Let marinate for 1 hour.
Grill rockfish: Put 1 lemon slice over each piece of fish. Place rockfish in a greased hinged fish basket. Sprinkle remaining rosemary over hot coals. Grill fish for 5 minutes. Turn basket and continue grilling 2-3 minutes, depending on thickness of fish, until fish begins to flake when tested with a fork. Arrange rockfish on individual plates, leaving the lemon slices in place. Drizzle with Lemon Sauce.
