Curry Pork with Mango Chutney

Serves 4

Very simple to make and full of wonderful flavor.


1 Tbsp olive oil
½ tsp. cumin seed
1 cup chopped onion
1 Tbsp grated fresh ginger
1 large mango (or 1 cup)
1 Tbsp jalapeno
¼ tsp ground turmeric
2 Tbsp fresh lime juice
1 Tbsp curry powder
2 Tbsp cilantro
1 pork tenderloin
Salt and pepper



Heat oil over moderately low heat in skillet. Add cumin seeds and stir until brown.
Add onions and cook slowly until soft and golden color.
Add ginger, mango, jalapeno and turmeric.
Transfer mixture to a bowl and allow to cool.
Add fresh lime juice.

Rub the pork tenderloin with curry powder, salt and pepper.
Grill the tenderloin over low heat until cooked through

Transfer the tenderloin to a platter and allow to stand for 10 minutes.
Slice and top with the chutney and cilantro.
