Pico De Gallo

1 cup

This is an essential addition to any fajita. It is also great as a salsa.


1 whole tomato, medium sized, diced
1/2 medium sized onion, diced
3 to 4 whole fresh jalapeno chilis, stems removed and diced (roast them first if you like)
12 sprigs fresh cilantro, minced
Juice of one whole lime


In a small bowl, combine all ingredients. Keep refrigerated and serve cold.
