This is a light, refreshing, and piquant appetizer.
Use the freshest fish available
Scallops may be substituted for the snapper
Green chiles may be substituted for the serrano's
Serve on tortilla chips.

3/4 pound red snapper, cut into cubes 1/4 cup fresh lime juice
1/4 teaspoon kosher salt 1/4 teaspoon fresh ground black pepper,
(or a white/pink/black combo)
1 clove garlic, minced 3 whole tomatillos, medium, minced
1 whole Roma tomato, seeded and diced 4 tablespoons scallion tops, chopped
1 tablespoon extra virgin olive oil 3 whole serrano chiles, seeded and diced
1 tablespoon fresh basil, minced 1/4 cup fresh cilantro, chopped
